  • 3 large baking potatoes
  • 1 lemon
  • 4 cloves garlic
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon chili or red pepper flakes
  • 60g Greek yogurt
  • 100g feta cheese
  • 2 tablespoon extra virgin olive oil
  • 1 lemon, juice and zest

Instructions

  1. Preheat your oven to 220 degrees C.
  2. Parboil the potatoes for about 10 minutes; drain and fluff them in a colander.
  3. Heat olive oil in a baking tray in the oven; add the potatoes and toss with seasonings.
  4. Add quartered lemon and unpeeled garlic; roast for about 20 minutes until golden.
  5. Remove lemon and garlic; continue roasting for another 25 minutes until crispy.
  6. Prepare the lemon-garlic mixture by mashing softened garlic and mixing it with remaining ingredients.
  7. Drizzle the mixture over hot potatoes once out of the oven.
  8. Blend feta cheese with yogurt and olive oil until smooth to create whipped feta sauce.
  9. Plate by spreading whipped feta on a small plate, topping with potatoes.
