  • 3 cups rotisserie chicken
  • 1½ cups cucumber (peeled and diced)
  • 1½ cups grape tomatoes (chopped)
  • ½ cup red onion (diced)
  • 1 cup plain Greek yogurt
  • 1 lemon (juiced)
  • 2 cloves garlic (minced)
  • 23 tbsp fresh dill (divided)
  • Salt & pepper to taste

Instructions

  1. Shred the rotisserie chicken into bite-sized pieces and place it in a large mixing bowl.
  2. In a small mixing bowl, whisk together Greek yogurt, lemon juice, minced garlic, 1 tablespoon of dill, salt, and pepper until smooth.
  3. Dice the cucumber and grape tomatoes; chop the red onion. Add these vegetables to the bowl with shredded chicken.
  4. Pour the dressing over the chicken and vegetables. Gently mix until everything is well combined.
  5. Serve immediately on pita bread, over lettuce, or as desired.
