  • 1/3 cup Granulated Sugar
  • 1/3 cup Dark Brown Sugar
  • 1/2 cup Vegetable Oil
  • 1/3 cup Full Flavored Molasses
  • 1 Large Egg (room temperature)
  • 1/4 cup Warm Water
  • 1 tsp Vanilla Extract
  • 1/2 cup Unsalted Butter (room temperature)
  • 8 oz Cream Cheese (room temperature)
  • 1 tsp Vanilla Extract
  • 2 cups Sifted Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, baking soda, baking powder, salt, and ground spices.
  3. In another bowl, mix granulated sugar, dark brown sugar, vegetable oil, and molasses until smooth. Add egg and vanilla extract; mix well.
  4. Gradually combine the dry ingredients with the wet mixture until just blended.
  5. Scoop tablespoon-sized amounts of batter onto the prepared sheets and bake for about 10 minutes or until springy to touch.
  6. While cooling, beat together unsalted butter and cream cheese; gradually add powdered sugar and vanilla until creamy.
  7. Once cooled, spread frosting between two gingerbread cakes to create sandwiches.
