  • 3 garlic cloves (peeled)
  • ½ cup fresh parsley
  • 1 tablespoon ground turmeric
  • 1 tablespoon apple cider vinegar
  • ½ cup olive oil
  • Salt and pepper (to taste)
  • 1 ½ pounds skinless, boneless chicken thighs (cut into 1-inch pieces)
  • 2 calabresa sausages (sliced) or substitute kielbasa/chorizo
  • 1 large carrot (finely diced)
  • ½ cup white wine
  • 2 ½ cups chicken broth
  • 1 cup white long-grain rice (rinsed)
  • 2 bay leaves
  • 2 Roma tomatoes (chopped)

Instructions

  1. Prep all ingredients by chopping onions, dicing carrots, slicing sausages, and rinsing rice.
  2. In a large pot, heat olive oil over medium heat. Sauté the onion and garlic until fragrant.
  3. Add chicken thighs, season with salt, pepper, and turmeric; brown on all sides.
  4. Stir in sliced sausages and diced carrots; cook until softened.
  5. Pour in white wine; simmer briefly before adding chicken broth.
  6. Mix in rinsed rice and bay leaves; bring to a boil then cover and reduce heat to low.
  7. Simmer for about 20 minutes until rice is cooked through. Fluff with fork before serving with chopped tomatoes and parsley.
