  • 8 sheets of rice paper
  • handful of mint leaves
  • handful of strawberries
  • 2 kiwis
  • 1 apple
  • 1 mango
  • 1/2 block cream cheese
  • 1 cup heavy cream (125g) softened
  • juice of 1/2 lime
  • 12 tbsp honey

Instructions

  1. Chop all fruits into thin strips.
  2. Dip each rice paper sheet briefly in water and place it flat on a surface.
  3. Add fruit strips and mint leaves to the center of the rice paper.
  4. Fold the edges over filling and roll tightly.
  5. For the dip, whip heavy cream until thick; fold in softened cream cheese, lime juice, and honey until well combined.
  6. Serve chilled with the creamy dip.
