  • 3 cups unbleached all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 4 large eggs (beaten)
  • 1 1/4 cups canola oil (or coconut oil)
  • 2 1/2 cups fresh strawberries (sliced and slightly mashed)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, beat the eggs and mix in the oil.
  4. Gently fold the strawberries into the egg mixture.
  5. Combine wet and dry ingredients until just mixed.
  6. Fill greased muffin tins nearly full.
  7. Bake at high temperature for 5 minutes; then reduce to 350°F (175°C) for another 15-19 minutes until a toothpick comes out clean.
