  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, melted
  • 1 cup sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup + 2 tbsp milk
  • 1 1/2 cups chopped strawberries
  • 1 1/4 cups unsalted butter, room temperature
  • 5 cups powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch or two of salt
  • Strawberries, for decorating

Instructions

  1. Preheat oven to 350°F (176°C) and line a cupcake pan with liners.
  2. In one bowl, mix flour, baking powder, baking soda, and salt. In another bowl, whisk melted butter, sugar, vanilla extract, eggs, sour cream, and milk until smooth.
  3. Combine wet and dry ingredients without overmixing. Gently fold in chopped strawberries.
  4. Fill cupcake liners slightly more than halfway and bake for 18–20 minutes or until a toothpick comes out clean.
  5. Allow cupcakes to cool completely before frosting with strawberry buttercream made by blending softened butter with powdered sugar and cooled strawberry puree.
