  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (for filling)
  • 1/4 tsp kosher salt (for filling)
  • 2 large eggs (for filling)
  • 4 egg yolks (for filling)

Instructions

  1. Make the tart dough by combining flour, powdered sugar, and salt in a food processor. Add cold butter and blend until pea-sized pieces form. Mix in the egg and vanilla extract until a dough forms.
  2. Chill the dough for at least one hour. Roll it out on a floured surface and place it into a tart pan, then freeze for 20 minutes.
  3. Preheat the oven to 350°F (180°C) and bake the crust for about 15–20 minutes until lightly golden. Allow it to cool.
  4. For the lemon curd filling, whisk together lemon juice, zest, granulated sugar, unsalted butter, salt, eggs, and egg yolks in a saucepan over medium heat until thickened.
  5. Pour the filling into the cooled crust and bake until just set in the center.
