  • 16 ounces firm tofu
  • 2 tablespoons olive oil
  • 3 cloves garlic (grated)
  • inches ginger (grated)
  • ¾ cup dried shiitake mushrooms
  • 8 ounces fresh mushrooms (chopped)
  • 6 cups vegetable broth
  • 1 cup broccoli florets
  • ¾ cup frozen peas
  • Optional: miso paste, noodles, scallions, cilantro

Instructions

  1. Soak the dried mushrooms in hot water for 5 minutes. In a large pot, heat olive oil over medium heat and sauté garlic and ginger for about 1 minute. Add sliced chili and soaked mushrooms (drain and reserve soaking water). Cook for another 5 minutes.
  2. Pour in vegetable broth along with the reserved mushroom soaking water (strained). Bring to a boil before adding diced tofu, broccoli florets, and frozen peas. Simmer for 10-15 minutes until vegetables are tender yet crisp.
  3. If desired, stir in miso paste just before serving. Adjust seasoning to taste and serve hot garnished with scallions or cilantro.
