  • 1 green bell pepper, chopped
  • 3 garlic cloves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat avocado oil over medium heat. Sauté chopped onion, green pepper, and garlic until softened.
  3. Add turkey sausage and cook until browned.
  4. In a mixing bowl, whisk together eggs, milk, thyme, salt, and pepper. Stir in the sautéed mixture and sweet potatoes.
  5. Transfer to a baking dish and top with mozzarella cheese. Bake for about 40 minutes or until set.
