  • 1 tbsp unsalted butter
  • 1 lb chicken breast, diced
  • 1 medium onion, diced
  • 1 red pepper, sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder (mild or medium)
  • 1 cup chicken stock
  • 2 kaffir lime leaves
  • 2 cups full-fat coconut milk
  • 1 large mango, diced
  • Fresh coriander leaves for garnish

Instructions

  1. Heat olive oil and butter in a large deep pan over medium heat. Add diced chicken and sauté until slightly golden brown (approximately 4-5 minutes). Remove and set aside.
  2. In the same pan, add onion and red pepper; cook for about 2-3 minutes until softened.
  3. Stir in garlic and ginger; cook for an additional minute until fragrant. Mix in curry powder, chicken stock, and kaffir lime leaves.
  4. Bring the mixture to a simmer; add coconut milk, diced mango, and cooked chicken. Simmer for about 10 minutes until sauce thickens.
  5. Serve over basmati rice or cauliflower rice and garnish with fresh coriander.
