  • 6 cups chopped lettuce (iceberg or romaine)
  • 2 cups sliced tomatoes
  • 1 cup sliced Persian or hothouse cucumber
  • 1 Greek marinated chicken breast (8 ounces)
  • 1/4 cup kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 clove minced garlic
  • 2 teaspoons dried oregano
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Wash and chop the lettuce into bite-sized pieces. Slice the tomatoes and cucumbers.
  2. If using pre-cooked chicken, slice it into strips. If raw, grill or pan-sear until cooked through and cube.
  3. In a large mixing bowl, combine lettuce, tomatoes, and cucumbers. Toss gently.
  4. Add sliced chicken on top followed by olives and crumbled feta cheese.
  5. Whisk together olive oil, vinegar, garlic, oregano, sugar, salt, and pepper in a small bowl to make dressing.
  6. Drizzle dressing over the salad mixture and toss gently to coat evenly.
