  • 4 cups (500g) bread flour or all-purpose flour
  • 2 1/4 teaspoons (7g) active dry yeast or instant yeast
  • 2 teaspoons (10g) salt
  • 1 3/4 cups (415ml) warm water
  • 1/4 cup (60ml) extra virgin olive oil (plus more for drizzling)
  • 2 tablespoons fresh rosemary leaves
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a bowl or stand mixer, combine warm water and yeast; let sit for 5 minutes until frothy.
  2. Mix in flour and salt until combined. Knead on medium speed for about 5 minutes until smooth.
  3. Transfer dough to an oiled bowl, cover, and let rise in a warm place for about 1 to 1.5 hours until doubled.
  4. Punch down the dough and shape it on an oiled baking sheet into a rectangle about half an inch thick.
  5. Cover again and let rise for another 30 minutes while preheating the oven to 425°F (220°C).
  6. Dimple the surface with fingers, drizzle with olive oil, sprinkle with coarse salt and rosemary.
  7. Bake for about 25 minutes until golden brown; cool slightly before slicing.
