  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • Juice and zest of 1 large lime
  • Fresh dill, Dijon mustard, garlic, kosher salt

Instructions

  1. To make the dressing, mix mayonnaise, sour cream, lime zest and juice, dill, mustard, minced garlic, salt, and pepper in a bowl until well combined.
  2. Boil water in a pot; cook shrimp for 2-3 minutes until pink. Remove and transfer to an ice water bath to cool.
  3. Once cooled, chop shrimp into bite-sized pieces.
  4. In the bowl with dressing, add chopped shrimp, diced cucumber, and sliced green onions; stir gently until evenly coated.
