  • 2 tablespoons dill pickle juice
  • 1 egg
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 4 brioche buns
  • 1 cup mayonnaise
  • Fresh dill
  • Garlic
  • Lemon juice
  • Cheddar cheese
  • Lettuce
  • Dill pickle chips

Instructions

  1. Marinate chicken in a mixture of buttermilk, dill pickle juice, egg, salt, pepper, garlic powder, and paprika for at least 2 hours or overnight.
  2. Prepare coating by combining flour, cornstarch, dried dill weed, baking powder, salt, and pepper in a shallow dish.
  3. Dredge marinated chicken in the coating mixture; double dredge for extra crispiness if desired.
  4. Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Fry chicken for about 6–8 minutes per side until golden brown and cooked through (internal temp should reach 165°F/74°C).
  6. Drain on wire racks lined with paper towels.
  7. For the aioli: Mix mayonnaise with fresh dill, lemon juice, minced garlic, and Dijon mustard; chill before using.
  8. Toast brioche buns until golden brown and crispy.
  9. Assemble sandwiches by spreading aioli on both bun halves; layer with lettuce, fried chicken, cheese slice, and pickles.
