  • 2 large poblano peppers
  • 4 chicken breasts
  • 1 cup heavy cream
  • 1/2 large onion, sliced
  • 3 tbsp olive oil or butter
  • 1 cup low-sodium chicken stock
  • 1 cup packed cilantro leaves
  • 2 large garlic cloves, minced

Instructions

  1. Prepare the peppers: Slice one poblano into strips and roast the other until charred. Steam, peel, and deseed the roasted pepper.
  2. Sear the chicken: Heat olive oil in a large skillet and sear seasoned chicken breasts until golden brown on both sides. Remove from skillet.
  3. Cook onions and peppers: In the same skillet, sauté sliced onions and poblano strips until softened. Add minced garlic.
  4. Make the cream sauce: Blend the roasted poblano with cilantro, salt, and chicken stock until smooth. Stir into the skillet with heavy cream and seasonings.
  5. Finish cooking: Return chicken to the skillet and simmer until fully cooked.
