  • 3 lb. corned beef brisket with spice packet
  • 2 bay leaves
  • 4 sprigs thyme
  • 1/2 lb. baby potatoes, halved
  • 4 medium carrots, cut into 2-inch pieces
  • 1 small head green cabbage, cut into wedges

Instructions

  1. Place the corned beef brisket in a large Dutch oven and cover with water. Add the spice packet, bay leaves, and thyme.
  2. Bring to a boil over medium-high heat, then reduce to a simmer for about 3 hours and 30 minutes until tender.
  3. After the brisket is cooked, add the potatoes and carrots; boil for 15 minutes. Then add the cabbage and cook for an additional 5 minutes.
  4. Remove the meat from the pot and let it rest for 10 minutes before slicing against the grain.
