  • 2 teaspoons cinnamon
  • 3 cups shredded carrots
  • 1 cup chopped pecans
  • For frosting: 2 packages cream cheese, softened
  • 1 stick unsalted butter, softened
  • 3 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three greased and floured 8-inch cake pans.
  2. In a large bowl, mix sugars, oil, and eggs until combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry mixture to the wet ingredients and stir until just combined. Fold in shredded carrots and pecans.
  5. Divide batter among prepared pans and bake for about 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool layers completely before frosting with a mixture of cream cheese and butter, gradually adding powdered sugar and vanilla.
