  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 2 (15-ounce) cans chickpeas
  • Juice of 2 limes
  • 1 ripe avocado
  • 4 large tortillas
  • Optional toppings: sliced avocado, fresh cilantro, hot sauce

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into florets and toss with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  3. In a bowl, combine rinsed chickpeas, diced red onion, chopped cilantro, lime juice, olive oil, chili sauce, and spices. Mix well.
  4. For the avocado crema, blend avocado with Greek yogurt, lime juice, water, and salt until smooth.
