  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup fire roasted corn, thawed
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, finely diced
  • 1 avocado, cubed
  • Zest and juice of 2 limes
  • Fresh cilantro, minced
  • Spices: cumin, chili powder (or Tajin), smoked paprika

Instructions

  1. In a medium mixing bowl, combine the chickpeas, black beans, corn, cherry tomatoes, red onion, and cilantro.
  2. In a separate bowl, whisk together lime zest, lime juice, cumin, chili powder (or Tajin), smoked paprika, salt, and olive oil (if using).
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Chill in the refrigerator for at least an hour before serving.
