  • 1 1/2 cups chickpeas (drained and rinsed)
  • 1 cup peanut butter
  • 1/3 cup coconut sugar
  • 2 tablespoons monk fruit and erythritol sweetener (or more coconut sugar)
  • 2 tablespoons water
  • 1/4 cup cacao powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine chickpeas, peanut butter, coconut sugar, monk fruit sweetener, water, cacao powder, baking soda, vanilla extract, and sea salt. Blend until smooth.
  3. Stir in shredded coconut until incorporated.
  4. Form the dough into about 15 balls and place them on the prepared baking sheet. Flatten each ball gently with a fork to create an X mark.
  5. Bake for 12-15 minutes or until edges are set.
