  • 1 pound rigatoni pasta
  • 32 oz marinara sauce
  • 2 small boneless skinless chicken breasts
  • 3 cups shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup flour
  • 2 eggs
  • 1 1/2 cups Italian breadcrumbs
  • Vegetable oil and butter for frying

Instructions

  1. Boil water in a large pot and cook rigatoni until al dente; drain.
  2. Cut chicken into thin slices. Set up three bowls: one with seasoned flour, one with beaten eggs, and one with breadcrumbs.
  3. Bread the chicken by dredging it in flour, dipping in eggs, then coating with breadcrumbs.
  4. In a skillet, heat oil and butter over medium heat; fry breaded chicken until golden brown on both sides.
  5. In a baking dish, layer half of the marinara sauce, rigatoni, cooked chicken, and half of the cheeses. Repeat layers with remaining ingredients.
  6. Cover and bake at 375°F for 30 minutes; uncover and bake another 10 minutes until bubbly.
