  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it reduces to about 1/4 cup (10–15 minutes). Allow it to cool.
  2. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  4. Beat in the egg and vanilla extract; stir in cooled apple cider.
  5. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  6. Gradually mix dry ingredients into wet ingredients until just combined; avoid overmixing.
  7. Scoop dough onto prepared baking sheets about 2 inches apart.
  8. Bake for 10–12 minutes until edges are golden and centers are set; cool on a wire rack.
