  • 1 tablespoon cornstarch
  • ½ teaspoon salt
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg, room temperature
  • ¼ cup sour cream or Greek yogurt, room temperature
  • 1 ½ teaspoon vanilla extract
  • 2 tablespoons dried chamomile flowers
  • Zest of two lemons
  • 2 cups powdered sugar (for icing)
  • Juice of two lemons
  • 2 tablespoons milk, plus more if needed

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cornstarch, and salt.
  3. In another bowl, cream together butter and sugar until light and fluffy. Add in egg, sour cream/yogurt, vanilla extract, chamomile flowers, and lemon zest; mix until smooth.
  4. Gradually combine the dry mixture with the wet mixture until just mixed.
  5. Scoop rounded tablespoons of dough onto the prepared baking sheet.
  6. Bake for about 10 minutes or until edges are lightly golden. Cool on racks.
  7. For icing: whisk powdered sugar with lemon juice and milk until smooth; drizzle over cooled cookies.
