  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Corn or flour tortillas
  • Sliced avocado
  • Pickled onions
  • Fresh cilantro leaves
  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss cauliflower florets with olive oil, cumin, paprika, chili powder, salt, and pepper until evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer and roast for about 25 minutes until golden brown.
  4. Meanwhile, prepare the cilantro lime crema by mixing sour cream or Greek yogurt with chopped cilantro, lime juice, olive oil, salt, and pepper until smooth.
  5. Warm tortillas in a skillet over low heat. Fill each tortilla with the roasted cauliflower and drizzle with cilantro lime crema. Top with avocado and pickled onions as desired.
