  • 1 cup brown sugar (packed light or dark)
  • 1/2 cup white granulated sugar
  • 1 cup finely grated carrots
  • 2 large egg yolks (room temperature)
  • 2 oz cream cheese (room temperature for filling)
  • 2 tbsp unsalted butter (room temperature for filling)
  • 3/4 cup powdered sugar (sifted for filling)
  • 1 tsp pure vanilla extract (for filling)
  • 1 tsp pure vanilla extract (for cookie dough)

Instructions

  1. In a mixing bowl, combine cream cheese, unsalted butter, powdered sugar, and vanilla extract. Mix until smooth and creamy; refrigerate to firm up.
  2. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. Cream melted butter with brown sugar and white sugar until light and fluffy. Add egg yolks one at a time, then mix in grated carrots and vanilla.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. Drop cookie dough onto sheets and create an indent for filling. Spoon cream cheese mixture into each indent.
  7. Bake for approximately 15 minutes or until edges are lightly golden.
