  • ¾ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup shredded carrots
  • ½ cup chopped pecans or walnuts
  • 4 tablespoons unsalted butter (for frosting)
  • 4 ounces cream cheese
  • 1½ cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • ⅙ teaspoon salt (for frosting)

Instructions

  1. Preheat your oven to 350°F and line cookie sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, cream softened butter and brown sugar until fluffy. Add egg and vanilla; mix well.
  4. Gradually combine dry ingredients with wet mixture. Stir in shredded carrots and nuts.
  5. Scoop dough onto prepared sheets about 2 inches apart and lightly flatten each ball.
  6. Bake for 13–16 minutes until set but soft in the center. Let cool before frosting.
  7. For frosting, beat together softened butter and cream cheese until smooth; gradually add powdered sugar and mix until fluffy.
  8. Frost cooled cookies generously.
