  • 3¼ cups all-purpose flour

  • pinch of ground nutmeg
  • 2 cups shredded carrots
  • 1 cup shredded zucchini
  • 1 cup diced peeled apple
  • ½ cup pecans (chopped)
  • ½ cup cream cheese (softened)
  • ¼ cup butter (softened)
  • 23 cups powdered sugar
  • 13 tbsp orange juice as needed

Instructions

  1. Preheat oven to 350°F and grease two 8×4 inch loaf pans.
  2. Squeeze excess moisture from shredded zucchini using a kitchen towel.
  3. In a bowl, whisk together flour, salt, baking powder, baking soda, and spices.
  4. In another bowl, combine melted butter and sugar; add eggs, orange juice, and vanilla extract until mixed.
  5. Gently fold dry ingredients into wet mixture; then add carrots, zucchini, apples, and chopped pecans until just combined.
