  • 1 ring 13.5 oz andouille sausage, sliced into ¼-inch rounds
  • 1 large onion, diced (about 1 cup)
  • ½ cup diced celery (about 1 rib)
  • ½ red bell pepper, diced
  • 2 tsp minced garlic
  • 1 tsp Cajun seasoning
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream
  • 1 cup mild cheddar cheese, shredded
  • Chopped parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Cook sliced andouille sausage until browned (3–4 minutes), then remove from the pot.
  3. Sauté diced onion, celery, and red bell pepper until softened (5–8 minutes).
  4. Stir in minced garlic and cook for another minute.
  5. Add Cajun seasoning, kosher salt, black pepper, paprika, cayenne pepper, chicken broth, and cubed potatoes; stir well.
  6. Simmer for 20–25 minutes or until potatoes are tender.
  7. Return cooked sausage to the pot and stir in heavy cream and shredded cheddar cheese until melted.
