  • 1 cup thinly sliced onions
  • ¼ cup white wine (or vegetable stock)

  • 1 cup roasted butternut squash
  • 3 large eggs
  • 1½ cups whole milk (or cream)
  • Fresh thyme, salt, pepper, nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Fit the pie crust into a 9-inch plate and prick the bottom with a fork.
  3. Sauté onions in butter or oil until caramelized (10–15 minutes).
  4. Roast diced butternut squash on a baking sheet for about 20 minutes.
  5. In a bowl, whisk together eggs and milk; add thyme, salt, pepper, and nutmeg.
  6. Assemble by layering sautéed onions, roasted squash, goat cheese in the crust; pour egg mixture over.
  7. Bake for about 40 minutes until set and lightly browned.
