  • 6 tablespoons unsalted butter
  • 1/4 cup freshly grated Parmesan cheese

  • Kosher salt and pepper to taste

Instructions

  1. Boil water in a large pot with kosher salt. Add the pasta and cook until nearly al dente. Reserve 2 cups of cooking water before draining.
  2. In a skillet over medium heat, melt 4 tablespoons of butter until it turns golden brown (3-5 minutes).
  3. Carefully add 1 cup of reserved pasta water to the browned butter and bring to a simmer.
  4. Gradually stir in the remaining butter until melted. Add cooked pasta, Parmesan cheese, lemon juice, and zest; cook for another 3-5 minutes until thickened.
  5. Stir in fresh dill and season with salt and pepper. Serve warm, topped with extra Parmesan.
