  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider or white vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ¼ tsp fine sea salt
  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Prepare the brown butter crust by melting the cold unsalted butter in a saucepan over medium heat until golden brown. Let it cool slightly.
  2. In a mixing bowl, combine all-purpose flour and sea salt. Add the cooled brown butter, water, and vinegar to form a dough. Shape into disks and chill for at least 30 minutes.
  3. For the filling, mix together sliced peaches, strawberries, granulated sugar, cornstarch, lemon juice, and fine sea salt in a bowl.
  4. Preheat your oven to 425°F (220°C). Roll out one disk of dough into your pie dish and fill with the fruit mixture. Roll out the second disk for the top crust.
  5. Bake for about 60–70 minutes until golden brown and bubbly. Allow cooling before serving.
