  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ½ teaspoon fresh cracked black pepper
  • Pinch of cayenne
  • 2 tablespoons avocado oil
  • 1 cup grilled or roasted corn
  • 1 cup pineapple, finely diced
  • ¼ cup red onion, finely diced
  • 1 jalapeño, finely minced
  • ½ bunch cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon agave
  • 1 teaspoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon fresh cracked pepper
  • ¼ cup sour cream
  • ¼ cup mayo
  • 1 chipotle pepper in adobo sauce, finely chopped + 1 tablespoon adobo sauce
  • ½ lime, juiced (about 1–2 tablespoons juice)
  • Warm corn tortillas
  • Purple cabbage, finely shredded
  • Cilantro for garnish
  • Lime wedges

Instructions

  1. Prepare the blackening spice mix by combining all spices in a bowl.
  2. Season mahi mahi with avocado oil and the spice mix. Marinate if time allows.
  3. Preheat your oven to broil and cook the fish on a lined baking tray for about 8 minutes until flaky.
  4. While the fish cooks, make the pineapple corn salsa by mixing corn, pineapple, jalapeño, cilantro, lime juice, agave, olive oil, salt, and pepper.
  5. Blend sour cream, mayo, chipotle pepper, adobo sauce, and lime juice for the creamy sauce.
  6. Warm tortillas and assemble tacos with fish, salsa, cabbage, and chipotle sauce.
