  • 1.5 pounds chicken breast
  • 3/4 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1.5 teaspoons ground cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon honey
  • 1 lime (zest and juice)
  • 2 tablespoons olive oil
  • 1 cup pineapple (diced)
  • 1 cup tomato (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tablespoons jalapeño pepper (minced)
  • 1/4 cup fresh cilantro
  • 8 corn tortillas

Instructions

  1. In a mixing bowl, whisk together smoked paprika, chili powder, cumin, salt, pepper, oregano, cayenne pepper, honey, lime zest and juice, and olive oil.
  2. Place chicken in a resealable bag and pour marinade over it. Seal the bag and ensure the chicken is well-coated. Marinate for at least 20 minutes at room temperature or up to overnight in the fridge.
  3. While the chicken marinates, prepare pineapple salsa by mixing diced pineapple, tomato, red onion, jalapeño pepper, lime juice, and cilantro in a bowl. Cover and refrigerate until ready to serve.
  4. Heat a nonstick skillet over medium-high heat and cook marinated chicken for about 5 minutes on each side until cooked through (internal temperature reaches 165°F).
  5. Allow chicken to rest for 5 minutes before slicing.
  6. Warm tortillas in the same skillet until soft.
  7. Assemble tacos by placing sliced chicken on tortillas and topping with pineapple salsa.
