  • 1 cup granulated sugar
  • 1/2 cup salted butter (softened)
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup salted butter (softened)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with liners or spray with non-stick spray.
  2. In a large bowl, mash the bananas until smooth. Mix in sugar and softened butter until well combined. Add eggs and vanilla extract; mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually combine the dry ingredients into the wet mixture until just blended.
  4. For the streusel topping, mix softened butter, granulated sugar, brown sugar, flour, and cinnamon in a separate bowl until crumbly.
  5. Use an ice cream scoop to fill each muffin cup with batter and sprinkle streusel on top.
  6. Bake for about 20 minutes or until golden brown. Let cool in the pan for at least 10 minutes before transferring to a wire rack.
