  • 2 to 3 ripe bananas (sliced)
  • 1 large egg
  • 1/4 cup granulated sugar
  • 1/4 cup canola oil
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 cup mashed ripe bananas (about 23 medium)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F. Line an 8×8-inch pan with foil and spray with cooking spray.
  2. In a mixing bowl, combine melted butter, brown sugar, granulated sugar, oil, sour cream, vanilla extract, and mashed bananas until well mixed.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients and mix just until combined.
  4. Pour half of the batter into the prepared pan. Layer sliced bananas on top before adding the remaining batter.
  5. Bake for about 45 minutes or until a toothpick inserted into the center comes out clean. Allow cooling before serving.
