  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, whisk together balsamic vinegar, honey, basil, oregano, and minced garlic.
  4. Heat olive oil in a skillet over medium-high heat; sear chicken for 2-3 minutes on each side until golden brown.
  5. Place seared chicken in the baking dish; pour balsamic mixture over top and scatter cherry tomatoes around.
  6. Bake for 20-25 minutes or until nearly cooked through.
  7. Add shredded mozzarella on top and return to the oven for another 5-10 minutes until cheese is melted.
  8. Let rest before serving; garnish with fresh basil if desired.
