  • 2 medium baguettes (1012 inches each)
  • 8 large eggs
  • 1/4 cup milk or cream
  • 1/2 cup shredded cheddar cheese
  • 6 slices turkey bacon (cooked and crumbled)
  • 2 cups fresh spinach (chopped)
  • 1/2 onion (finely chopped)
  • 1/2 red bell pepper (finely chopped)
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Slice the top third off each baguette and hollow out the insides, leaving a half-inch shell.
  3. Brush the insides with olive oil and pre-bake for 5-7 minutes until slightly crispy.
  4. In a skillet, sauté onion and bell peppers until softened. Add garlic, spinach, and crumbled turkey bacon; season to taste.
  5. In a bowl, whisk together eggs, milk, cheeses, salt, and pepper. Combine with the sautéed mixture.
  6. Pour the egg mixture into the prepared bread boats, filling almost to the top.
  7. Bake for 20-30 minutes until golden brown and set.
