Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss butternut squash in olive oil, salt, and pepper; roast on a lined baking sheet for 15-20 minutes.
  3. Roast Brussels sprouts similarly for 20-30 minutes until crispy.
  4. Cook bow tie pasta in salted boiling water until al dente; drain while reserving some pasta water.
  5. In a skillet, brown sliced smoked sausage; remove from heat.
  6. Sauté minced garlic in the same skillet until fragrant; add butter to melt.
  7. Toss cooked pasta with garlic butter sauce; season with salt, pepper, and smoked paprika.
  8. Mix in roasted vegetables and sausage; adjust seasoning before serving warm.
