  • 4 cups French bread
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 3 tablespoons maple syrup
  • 1/3 cup chopped pecans
  • 2 ½ tablespoons light brown sugar
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon corn starch
  • 2 tablespoons water (or more if needed)
  • ¼ cup cream
  • 2 tablespoons light brown sugar
  • ½ teaspoon vanilla
  • ¾ teaspoon cinnamon
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin pan with parchment paper.
  2. In a saucepan, combine chopped apples, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Cook over medium heat until softened, about 5-10 minutes.
  3. Cut French bread into small cubes and place in a mixing bowl.
  4. Whisk together eggs, milk, cream, brown sugar, vanilla extract, cinnamon, and nutmeg in another bowl; pour over bread cubes and let soak for 15 minutes.
  5. Fill muffin cavities with soaked bread mixture and create slight indentations. Top with apple filling and sprinkle with pecans.
  6. Bake for 22-25 minutes or until golden brown.
