  • 1.5 pounds Beef tenderloin
  • 1 cup apple cider
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons butter (divided)
  • Salt and pepper to taste
  • Optional: fresh thyme
  • Optional: cornstarch for thickening

Instructions

  1. Marinate the Beef medallions in half a cup of apple cider, minced garlic, thyme, salt, and pepper for at least 30 minutes.
  2. Boil salted water in a large pot; add cubed sweet potatoes and cook until tender (approximately 15-20 minutes). Drain and return them to the pot.
  3. Heat olive oil in a skillet; sear the marinated Beef medallions for about 3-4 minutes on each side until browned. Set aside.
  4. In the same skillet, sauté sliced onions for about 4 minutes. Add reserved marinade and remaining apple cider; bring to simmer before adding back the Beef. Cover and cook until Beef reaches an internal temperature of 145°F (about 10-15 minutes).
  5. Mash drained sweet potatoes with butter, cream or milk, salt, and optional cinnamon until smooth.
  6. Serve mashed sweet potatoes topped with apple cider Beef and drizzle with sauce.
