  • 1/3 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 cup ground almonds
  • 1/3 cup all-purpose flour
  • 1 3/4 cups all-purpose flour (for frangipane)
  • 3/4 cup unsalted butter (softened)
  • Sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine melted butter and granulated sugar. Mix in egg yolk, vanilla, almond extract, ground almonds, flour, and salt until well blended.
  3. For the frangipane center, cream softened butter and sugars together before adding egg yolks one at a time. Stir in remaining ingredients until smooth.
  4. Form small balls from the cookie base, place frangipane filling in the center, and wrap dough around it to seal.
  5. Position on the baking sheet, top with sliced almonds, and bake for about 13 minutes until golden brown.
