Ingredients

  • 200g udon noodles
  • 100g shrimp
  • 1 garlic clove (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut into matchsticks)
  • 1 spring onion (chopped)
  • Soy sauce
  • Oyster sauce
  • Rice vinegar
  • Brown sugar
  • Sesame oil

Instructions

  1. Cook udon noodles according to package instructions. Drain and rinse.
  2. In a pan, heat oil and sauté garlic until fragrant. Add mushrooms and cook until tender. Stir in onions and carrots; season with salt and pepper.
  3. In the same pan, add oil and shrimp seasoned with soy sauce. Cook until pink.
  4. Add udon noodles to the pan; stir-fry on high heat until slightly crispy.
  5. Pour in the remaining sauce ingredients and mix well.
  6. Fold sautéed veggies back into the mixture and garnish with spring onions before serving.
