- 200g udon noodles
- 100g shrimp
- 1 garlic clove (minced)
- 1 yellow onion (sliced)
- 120g white mushrooms (sliced)
- 1 carrot (cut into matchsticks)
- 1 spring onion (chopped)
- Soy sauce
- Oyster sauce
- Rice vinegar
- Brown sugar
- Sesame oil
- Cook udon noodles according to package instructions. Drain and rinse.
- In a pan, heat oil and sauté garlic until fragrant. Add mushrooms and cook until tender. Stir in onions and carrots; season with salt and pepper.
- In the same pan, add oil and shrimp seasoned with soy sauce. Cook until pink.
- Add udon noodles to the pan; stir-fry on high heat until slightly crispy.
- Pour in the remaining sauce ingredients and mix well.
- Fold sautéed veggies back into the mixture and garnish with spring onions before serving.
