  • 1/4 cup granulated sugar (for cheesecake filling)
  • 1 egg (for cheesecake filling)
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • 1 cup white chocolate chips
  • 1 cup chopped peanut butter cups

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition along with vanilla extract.
  3. In another bowl, combine flour, baking soda, and salt; gradually mix into wet ingredients. Chill dough for 1 hour.
  4. For the cheesecake filling, beat cream cheese until smooth; add sugar, egg, and vanilla extract until creamy.
  5. Scoop tablespoon-sized portions of cookie dough, flatten into disks, place cheesecake filling in the center, seal around it with dough, and roll into balls.
  6. Arrange on the baking sheet with space between them. Bake for 10-12 minutes or until edges are golden.
  7. Melt white chocolate chips and drizzle over cooled cookies; top with chopped peanut butter cups.
