Ingredients

  • 2 Tbsp olive oil
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup yellow onion, chopped
  • 3 garlic cloves, minced
  • 32 oz vegetable broth
  • 30 oz canned diced tomatoes (with liquid)
  • 3 Yukon gold potatoes, chopped
  • 1 cup green beans (fresh or frozen)
  • 1 cup frozen corn
  • 1 cup frozen peas
  • Italian seasoning, salt, and pepper

Instructions

  1. In a large pot over medium-high heat, sauté olive oil, carrots, celery, and onion for about 5 minutes.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in vegetable broth, diced tomatoes, potatoes, green beans, Italian seasoning, salt, and pepper. Bring to a boil then reduce heat and simmer for 8–10 minutes until veggies are tender.
  4. Finally, mix in corn and peas; cook for another 2 minutes until heated through. Serve hot.
