  • 400 g dried pasta shapes (like rigatoni)
  • 1 tbsp vegetable oil
  • 1 large red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large courgette (zucchini)
  • 2 cloves garlic
  • 2 x 400 g tinned chopped tomatoes
  • 120 ml double cream
  • 100 g strong cheddar cheese (grated)
  • 100 g mozzarella (grated)
  • Fresh baby spinach

Instructions

  1. Preheat oven to 190C/375F. Cook pasta in boiling water for one minute less than package instructions; drain.
  2. Sauté chopped red onion in vegetable oil over medium heat until softened, about 3-4 minutes.
  3. Add red and yellow bell peppers, courgette, garlic, tomato puree, oregano, thyme, salt, and pepper; cook for another 2-3 minutes.
  4. Stir in tinned tomatoes and cream; bring to a gentle bubble.
  5. Mix cooked pasta and fresh spinach into the sauce; transfer to a baking dish.
  6. Top with grated cheddar and mozzarella cheeses. Bake for 20-25 minutes until golden brown.
  7. Garnish with torn parsley before serving.
