  • 1 1/2 cups brown lentils
  • 12 corn or flour tortillas
  • 1 large onion
  • 2 cloves garlic
  • 2 cans Rotel tomatoes
  • 1/4 cup lime juice
  • Vegan taco seasoning

Instructions

  1. In a large pot, combine brown lentils, diced onion, minced garlic, diced jalapeño, Rotel tomatoes, vegetable broth, and taco seasoning. Bring to a boil over medium heat, then reduce to low and simmer until lentils are tender.
  2. Allow the filling to cool slightly before rolling about 2-3 tablespoons into each tortilla.
  3. Cook using an air fryer at 375°F for about 10 minutes or bake in an oven at 400°F for 15-20 minutes until crispy.
