  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking

Instructions

  1. Press the tofu between clean towels for about 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into 1-inch cubes and coat with cornstarch in a bowl.
  3. Heat oil in a large skillet over medium-high heat and add tofu in a single layer. Cook without stirring for 3-4 minutes until golden brown.
  4. Flip the tofu and cook for another 3 minutes until crispy. Transfer to a plate.
  5. In the same skillet, sauté sliced peppers and onions for about five minutes until caramelized.
  6. Add minced garlic and ginger; cook for another thirty seconds until aromatic.
  7. Toss in pineapple chunks and caramelize for an additional 2-3 minutes.
  8. Mix soy sauce, rice vinegar, and maple syrup in a small bowl; pour over the mixture in the pan along with the crispy tofu. Stir gently for two minutes until glossy.
  9. Serve immediately garnished with green onions and sesame seeds.
