  • 5 Corn on the Cob (or 4.5 cups frozen/canned corn)
  • 3 tablespoons vegan butter
  • 1 medium onion
  • 2 large potatoes
  • 28 ounces canned light coconut milk
  • 14 ounces canned coconut cream
  • Vegetable stock
  • Green onions

Instructions

  1. Slice corn off the cob and set aside.
  2. In a large pot, melt vegan butter over medium heat. Sauté chopped onion until softened.
  3. Add crushed garlic and dried thyme; stir well.
  4. Mix in all-purpose flour, then gradually whisk in vegetable stock, light coconut milk, and coconut cream until smooth.
  5. Add cubed potatoes and corn cobs for flavor; include a bay leaf.
  6. Simmer for 25 minutes until potatoes are tender.
  7. Remove corn cobs and bay leaf. Stir in fresh corn and green onions; season with salt and pepper to taste.
