  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • 125g dried breadcrumbs
  • 75g mature cheddar, grated
  • 1 egg

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add onions and sweet potatoes; cook until soft (5-10 minutes).
  2. Stir in garlic, then add chopped tomatoes and chicken stock; bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  3. In a bowl, mix breadcrumbs, cheddar, egg, and seasonings to form dumpling dough; shape into small balls.
  4. Blend the soup until smooth; adjust seasoning if needed.
  5. Drop dumplings into simmering soup; cook for about 10 minutes without stirring.
